This elegant and stylish wine has been elaborated from small-grained Muscatel grapes; whose original characteristics are enhanced by over-ripening. Grapes are harvested once they are extremely ripe and have a high sugar content. They are then de-stalked and crushed.
Following a short maceration period, the grape must is cold racked for 48 hours. Once the alcohol content is sufficient and it is balanced with the residual sugars, then the fermentation process is stopped through cooling and filtering. Finally the wine is stabilized and bottled.

Elevation: | Brilliant bright golden yellow. Intense, delicate and complex, with a predominance of citrus fruits, notes of bitter orange marmalade and roasted notes of small-grain muscatel raisins. Complex and fresh, silky and flavorful on the palate with citrus and creamy notes which, combined with its acidity, maintain the liveliness of this wine. Fermentation: | Grapes fermentation in stainless still tanks at 10-15ºC. When the wine reaches 11º of alcohol and the residual sugar content desires, it is kept at cool temperatures in order to stop the fermentation. |
