This specialty wine has been elaborated from a careful selection of Garnacha and Tempranillo from exclusives parcel of our own. The vineyards from which these grapes are picked are more than 25 years old.
Fermentation takes place at a controlled temperature of around 25 ºC and maceration lasts 10 – 12 days depending on the condition of the grapes. When alcoholic fermentation is complete, the wine is subjected to 6 months of micro-oxygenation in wine-making tanks in order to round it off and enhance its structure and aromas.
Part of this wine has been lightly aged for 3 months in American oak barrels.
*Recommended by Decanter Magazine as "Perfect Weekday Wine" by Christlle Guibert.
